In modern times, the Old French word chopiner means to tipple. The surname Chapington may also be a patronymic name derived from the personal name Chopin.

The surname Chapington was first found in Devon, but we must look to Somerset to find the first recording of the family; for it is there that researchers found John Chopyn was listed 1 Edward III (during the first year of King Edward III's reign.) [1]

The Curia Regis Rolls for Devon in 1219 included an entry for Walter Chopin and later the Assize Rolls for Somerset recorded Henry Choppin in 1280. [2]

To escape the unstable social climate in England of this time, many families boarded ships for the New World with the hope of finding land, opportunity, and greater religious and political freedom. Although the voyages were expensive, crowded, and difficult, those families that arrived often found greater opportunities and freedoms than they could have experienced at home. Many of those families went on to make significant contributions to the rapidly developing colonies in which they settled. Early North American records indicate many people bearing the name Chapington were among those contributors: William Choppin who arrived in New York City in 1830.
