The Gullette surname is of uncertain origins. It has been suggested that it may have evolved from the French name Guillaume, which became William. Alternatively the name could have been from the Middle English word "goule," meaning "gullet." 1

Early Origins of the Gullette family

The surname Gullette was first found in Berkshire where Wlotus (Guillotus) was listed in the Pipe Rolls of 1175. Later, Hugh Golie, listed in the Pipe Rolls for Oxfordshire in 1206. 1

Early London records show Gilot de Portesmue in the Subsidy Rolls for 1292 and Guillotus le Hauberger in the Subsidy Rolls for 1319.
